I need to use up an eggplant?
I'm using part of it for a stew recipe. What can I do with the rest? I hate to waste food. TIA!

Cube it... toss in flour...egg ....then bread crumbs and fry for a topping on the stew.

If that left over eggplant can be cut in slices, just dip in flour, then beaten egg, the bread crumbs and fry up the slices. You can top the slices with some pasta sauce and mozzarella cheese then bake it in the oven. Now you have Eggplant Parmigiana
You can also saute that eggplant along with chopped onions, garlic and red bell pepper. Add any fresh or dried herbs you like then process all the ingredients in a food processor or blender for a great spead to use with raw veggies or pita chips or use it for Bruschetta.

I would just increase the amount of eggplant in your current dish.
If you don't want to do that and you have only a bit left you could saute it and toss it in the freezer. Next time you make stew, chili or pasta sauce use it. It will be mush but it will breakdown in the stew, chili or sauce and you won't even know it is there. It will just add more fiber and a bit more bulk to your dish.

I like to roast it and then, eat it like that without adornment. I wouldn't serve it to the family but enjoy it for myself. There are several eggplant recipes. those are Mediterranean type of dishes.
