What Kind of Sauce Should I Make With Pasta?

I am hungry and I need a simple sauce with ingredients that I will have on hand please :)

    If I'm too lazy to whip up some meat or tomato sauce, I usually add the following to my pasta:

    • Olive oil (I use extra virgin, but not everyone is a fan)

    • Ground-up feta cheese (I cut mine with a knife)

    • Garlic salt

    It's a simple and tasty recipe (adjust each ingredient as necessary).

    Try this ...

    TOMATO PASTA SAUCE (NAPOLITANA)

    Serves 2

    INGREDIENTS

    2 cloves of garlic

    2 onions

    1 tablespoon of olive oil

    400g tin of chopped tomatoes

    140g tin of tomato purée

    2 teaspoons of oregano

    METHOD

    Peel the garlic and chop it into tiny pieces. Peel the onions and chop them into tiny pieces.

    Put the oil into a frying pan on a medium heat. Add the garlic and onion. Fry for 3 minutes until the onion is soft. Stir frequently to stop it sticking.

    Add the tomatoes, tomato purée and herbs. Stir thoroughly.

    Bring to the boil, then turn down the heat until it is just boiling. Cook for another 5 minutes, until the sauce has reduced.

    ADDITIONS & ALTERNATIVES

    For Arrabbiata sauce add ½ a teaspoon of chilli flakes.

    Use mixed herbs instead of the oregano.

    TIPS

    This sauce can be blended before adding the herbs and used on a pizza.

    Hi Caitlyn,

    'Aglio, olio e peperoncino' is probably the simplest out there (and one of my favorites) for spaghetti. We usually cook it with sliced black olives or anchovies (or both) and serve it with wilted spinach or other green veggies and fried guanciale or bacon...we also add slices of fried or roasted chicken as a topping, but that is ALL totally optional! This is one of the most flexible recipes I know.

    Other pasta types need something with meat, tomatoes and cheese, or butter and cream, plus lots of veggies...

    brown sugar

    any type of spice- basil, coriana, oregano, blackpepper

    fried mince onions

    flour- as a thickening agent

    2 teaspoons of powdered milk or normal milk

    can of cream of ??? soup, I use mushroom or celery, with half can some kind of milk, I use heavy cream, and maybe some herbs like chives, parsley, etc
