A screen/pick is when you basically set up a wall to the side or behind of a defender, and your feel is set.
An illegal screen/pick is when you either intentionally make unnecessary contact with the defender ex/ using force with your shoulder, hitting them, tripping them on purpose, or when your feet are shuffling.
A pick and roll is when you set up a screen, and then allow the defense to brush off your outside shoulder to "roll" towards the basket for a possible score.
Picks vary in how deep you should set them, usually high picks are meant for isolations for a guard. a mid-range to lower pick is usually for a pick and roll.

A pick is illegal if you're feet aren't set before contact is made, or if you don't give the opposing player enough space to change direction. What you do afterwards doesn't affect the legality of the pick itself.
