New to being vegan, but having issues?

I've was vegetarian for 6 years, and recently have noticed more and more that I have an intolerance for lactose. So I decided to quit eating animal products all together. I am a college student and have two jobs so I don't have a lot of time in an average day. Lately, I feel I've failed miserably because I've been eating oatmeal for almost every meal, I add fruit, but obviously that isn't sufficient. Usually I don't eat oatmeal for dinner, I eat steamed vegetables and brown rice. Sometimes I eat a piece of toast with peanut butter. That's all I've been eating, and I've been eating like this for so long that I don't know how to move away from it. Now, it's to the point where other foods are really gross to me or make me sick just by looking at them. I want to eat more foods but since I'm so used to what I already eat, and other foods are nauseating to me, I'm not sure how to start incorporating other things into my diet. I need some help with this please :)

Oh the reason I started eating the same foods is because the university I go to has terrible food in the cafeteria and I didn't want to gain any weight.

I'm a 23 year old female if that matters. Also, I work out regularly with P90X3 so extreme exercise.

Update:

I don't have an eating disorder. My goal was to get away from processed foods..considering my roommates all gained at least 10lbs from eating at the cafeteria, I have a legit reason to be eating what I am eating. I'm pretty picky to begin with, but starting a new lifestyle without foods I have been eating for 23 years is difficult. I want to lose weight because I need to..I've lost 50lbs with eating healthy and exercise over the last year and a half- I haven't eaten any processed foods in about 4 months and that's all that is at my school. Since I have zero time and can't cook, I make foods like oatmeal, brown rice, and vegetables because it's easy. I love all three, however, I don't want to eat anything else because other foods are gross to me now. Don't search for a reason to put me in the 'eating disorder' category because that certainly isn't the case.

Beans? Seeds? Throw some sunflower or pumpkin seeds in with your rice. Maybe quinoa. Add more nuts/nut butters. Stir nut butter into your oatmeal.

I also recommend thinking about some counseling. Eating the same foods all the time, being repelled by other foods and worry about gaining weight even though you work out hard are all symptoms of an unhealthy relationship with food. You could have the potential to develop a full blown eating disorder-ain't nobody got time for that!

Your diet might be more complete than you think. Maybe you just need to add some green vegetables and a calcium source.

There are free online websites that you can use to see how nutritionally-complete your diet is. You just type in what you ate that day (or what you plan to eat), and it will show you the nutrients that you've eaten (and which nutrients you still need to eat). One such website is Cronometer: http://cronometer.com/ . It is free to register and use.

Also, a Registered Dietitian could help you to tweak your diet a bit, so that you get all the nutrients you need. You can find a local Registered Dietitian through this website: http://www.eatright.org/ . Just click on the "Find a Registered Dietitian" button, located in the upper-right-hand portion of the webpage.
