Chum Salmon had low market value before 1990's, so why it got more market since 1990's?

I got this from wikipedia, that chum salmon has the lowest commercial value in the family of salmon. But since 1990's, more markets were developed for chum salmon. So what changed? What do people use chum salmon for now that did not before 1990's?

    Maybe it's not that they are using it differently but that more people are using it at all.

    Supply and demand the more people want something the more it will cost.
