ED - your escargot will be your appetizer or first course. You can serve any protein you like for your main course. Since escargot is an elegant first course I would think perfectly cooked lamb chops with pan grilled asparagus and garlic mashed potatoes would be a lovely main course. You can do a lovely red wine reduction to top your lamb chops or maybe a beurre blanc sauce for the asparagus. For desert serve fresh grilled or pan grilled pineapple drizzled with honey and topped with a dollop of French Vanilla ice cream.

Escargot is a dish of cooked land snails, usually prepared with garlic and butter and served as an appetizer. If serving escargot as a main dish, since it's so rich, you might just want to include a small salad and a good crusty bread, or a steamed vegetable. - See more at: http://www.chacha.com/question/what-side-dishes-is...

Escargot by itself as a appetizer is always a treat. Plain with garlic butter and lemon, or on a crostini very nice.
