I have a lot of persimmons in my freezer. I want to make Jam out of them. How?

These are hand picked by my mother. They have been frozen for a year in their straight off the tree form.. Will they work for this? Mom always made cookies from them but she passed away recently and I would like to make jam that I could distribute to the family..

    Grandmother's Persimmon Jam

    Ingredients:

    3-4 Persimmon fruits

    2 cups sugar

    1 tablespoon fresh lemon juice

    1/2 teaspoon grated lemon zest

    Directions:

    First you will need to make persimmon pulp. To do this, use a paring knife to make a small x-shaped cut in the pointed end of the fruit. Then, peel back the skin of the fruit and throw away the seeds, skin, and stem. My grandmother used a large knife to smash the persimmon into pulp, but a food processor works well too.

    Combine 3 cups of persimmon pulp and sugar in a medium saucepan. Cook over a low heat, stirring constantly. Be sure to not allow the persimmon mixture to boil. The mixture will thicken in about 15 minutes and no longer have a translucent color. Remove pan from heat and stir in the lemon juice and zest.

    Following the manufacturer's instructions on your canning supplies, pour the jam into jars and seal them.

    Enjoy your jam on toast, biscuits, or muffins. My grandmother and I would sometimes spread a little on homemade shortbread cookies.

    They will not make a very good jam having been in the freezer at all, but it is worth a try.

    Persimmons are one of those kinds of fruits that has to be eaten fresh. That's why one rarely sees them in the grocery store. Their shelf life is fast. After freezing them, they may turn to mush once they are thawed. Probably why your Grandma made bread and cookies out of them. Try a small batch of jam first before using them all up. You may have to follow your Grandma's lead and make a lot of persimmon bread out of it. My Mom did this as well. She had 3 persimmon trees in her back yard.
