why cheese taste etter heated or melted?

As a culinary arts major i never learned one thing, why does cheese taste better melted than solid. Does anybody know why?

    I think it is partly texture, creamy spreads the luxurious feeling of fat and protein around your mouth. I think it's a bit like the way a soft egg beats a hard cooked egg.

    The other part is that warm food is more flavorful because it is "atomized" more so you smell it as you eat it.

    I like cheese the most when it's soft, but cut from a brick (solid)... not heated, not melted (although still tastes good). It's really just preference, so it's subjective.

    I think tacos taste better then nachos.... nachos have melted cheese, tacos have shredded cheese.

    Quite often warmer foods will make it easier for your taste buds to pick out flavors in the food.
