How to sell one house and choose another one in this case?
Where I live in South Herts houses are in short supply. Few properties come to the market in the range of 300-400 and when they do, they are sold quickly.
I am planning to move to another house in the area. If I put my property on the market and it sells in a week or two, but I haven't found the property that I am interested in, because of the low supply, how does it work?
Has anyone been in that situation?

Yes, happened to us, we sold our house one day on the market and couldn't negotiate to stay longer or extend the closing. We moved in with my Parents for a month and used storage. Granted, a 40 y/o man, his wife and 2 kids living with Mommy and Daddy sucked, But the ability to buy our dream house and not settle for an OK house more than made up for it!

what do your THINK happens?
you sell the house - then move out
Where you go then is up to you
you can go an a very long holiday if you want (using the money you got from the house)
you can live on the streets,
you can move to somewhere where you can easily get a house
you can rent a house
You have loads of choices
All you got to do is pick one

You carry on with your sale and move into rented. Your buyers will want to start the legal process straight away, they won't be hanging around waiting for you, so could go elsewhere. They could also be part of a chain.

Either make it a condition that the sale will exchange and complete once you have found somewhere - this is called being in a chain and the solicitors of all parties involved will help everyone to agree on a date for completion.
Or carry on with the sale and move into rented accommodation until you find somewhere.

I'd look for a house before you try selling, and tell the sellers that you're interested in buying but that you need to sell your property off first, it's quite a long shot but a couple of friends I have did the same thing. Also, if you start selling before finding a house it's possible that you might have to rent out another place and wait until you've found your new property. It might be worth buying a little over budget if there aren't that many houses that fit your requirements.

You can make the sale contingent on your finding another place. If potential buyers don't agree, sell and move your stuff into storage.
