Why is some of my broccoli growing in chutes/stalks instead of heads?

I am a first time gardener. We planted onions, cauliflower, cabbage, etc. Everything seems to be doing fine except for the broccoli. I planted 10 broccoli plants, and 3 of them are shooting up in skinny stalks, and even have small yellow flowers blooming. As I said, most of the broccoli looks good. Nice, big, green round florets. But a few of them are starting to shoot straight up with 7 or 8 tall, skinny chutes of broccoli. Any ideas why this would be happening? Do I need to harvest them? Why a few and not all of them? Should I cover them up? Thanks for any advice!

    Broccoli tends to bloom in heat ( yellow flowers) not sure where you are located but if it has heated up the broccoli will flower and be bitter....cool temperatures lend to sweet broccoli

    there is a broccoli that does not have a head , but the florets as they are called can be picked as you want them . very nice

    The extreme jump in temps in a day rather than a moderate daily change has caused the stems on some to shoot up versus produce. You can take what broccoli that hasn't turned (flowering), and harvest it. Prune the shooter stem off, and let the other's produce. Sometimes called 'sucker's', if there is a jump of 25-30 degrees in a day, it might happen rather quickly, or drop that way..some of the weather we are having in the Midwest too.
