Recipe for Cole Slaw that uses an egg?
My grandmother used to make slaw (or perhaps it was the slaw dressing) on the stove top in a little iron skillet. All I can recall is that the finished slaw product had vinegar, sugar and she somehow incorported an egg. Unfortunately, she is no longer living and this is one recipe she didn't pass on to me. Does anyone else know what kind of slaw recipe I am referring to? Could you help me out in sharing any recipes you have that may be like this one? Thanks!

It is sometimes titled "Hot Slaw," or Pennsylvania Dutch Slaw. Or "Old Fashioned Boiled Dressing Slaw. The Dressing is a mixture of vinegar, sugar, egg, sometimes mustard all mixed together and cooked. Then you add the shredded cabbage to that and cook quickly so that the cabbage doesn't lose too much crunchiness. Or pour the hot dressing over shredded cabbage in a bowl.
If you don't have dry mustard, use hot dog mustard instead.
Btw, this recipe is not that easy to find these days.
2 eggs
2 tbsp. sugar
1 tsp. butter
1 c. vinegar
1 tsp. dry mustard
1/4 tsp. pepper
1/2 tsp. salt
Beat eggs. Add sugar, seasonings, vinegar and butter. Cook in double boiler until thick like custard.
If you don't have a double-boiler, use a heavy bottomed stainless steel saucepan.

Deviled Egg Coleslaw:
2 large hard boiled eggs, finely chopped
1/4 tsp crumbled old bay seasoning
9 tsps or 1 packet brown mustard (3 tbsp)
1 tsp salt
2 tsps white vinegar
3/4 cup mayonnaise
1 tsp red pepper sauce
1/2 head large cabbage, shredded
1 small onion, finely minced
Directions
Combine all ingredients except for cabbage in a large bowl.
Add cabbage to bowl and toss well.
Cover and chill for at least 1 hour before serving.

That uses a microwave, but it would, of course, originally have been done on a stovetop
