What are my options if someone has threatened to key my car?
This person used to work where I am currently employed but was fired. He was overheard by 4 people that he wanted to key my car and one of my friends cars. He was seen standing near my car the other day in the parking lot while I was at work and was about to key it but someone stopped him, and he has not done anything yet. Do I have any options to take to prevent something from happening or can I not do anything until something happens?

You should get written and notarized statements from everyone who heard him saying he wanted to key your car. You should notify your employer so they can be on the lookout for him. (He has no business being at your office if he doesn't work there anymore).
You might also want to notify the police via a phone call or written notice so they have it on file.
You should also park close to a security camera in case he does, so you have proof. If there are no cameras, park close to an area that gets a lot of people walking by or next to lots of windows so people working can monitor your car.

Call your insurance and lower your deductable. You have no options until it actually happens and when it does you will have no proof unless you put an ip camera or recording device in your car.

tell him if he keys your car you will key his face, drawing a picture of a dick on his forehead that will be stuck there permanently
