Smoked ribs . what kind of wood do you like best?

When smoking pork ribs or other meat for that matter what type wood do you like to use ?

BBQ sauce or no ?

I personally like apple , cherry or a mix of the two and sometimes a little hickory tossed in . I do use just a little honey BBQ sauce for the last hour .

    We make our own BBQ sauce as it allows us to flavor it any way we wish. We use mostly hickory with some mesquite. Apple is harder for us to come by here but we grab some when we see it.

    From time to time we will also use a meat rub. That's the great thing about BBQ. You can change things each time for different flavors.

    Are you smoking them for flavour and then grilling to finish, or are you smoking them long enough to cook, either wood is fine, hickory and mesquite are better, if you smoke them to cook them the temperature needs to be 275-300 d F for 3-4 hours, if your smoking for flavour and grilling to finish, then 250 d F and 1-3 hours, then on the grill or in the oven for 2-3 hours at 325 d F, then sauce them
