Darwin is not the best place to be in January. It is the wet season and most of the tourist attractions are closed or inaccessible. Southern Australia is the place to be. The Sydney Festival is on, Canberra and Melbourne are well worth visiting as is Tasmania. Alice Springs and Uluru are frighteningly hot in January with temperatures well over 40°C.
If you want to go to Darwin, Don't go there before April and Alice Springs is OK then - but not in January. Darwin has a median January rainfall of 414mm on 21 days. Take your umbrella, you'll need it.

Take won of those camping bus tours that leave Darwin, and head south through Kakadu, Manaranka, all the way down to the Alice, then connect to another bus that goes to Adelaide.
If your really keen on the heat and humidity of the North go for it. Flights to Australia in January are NOT cheap, it is their high season.

Darwin's a pretty small place. You could probably go scuba diving if you wanted.
