It can get fairly hot during Australian summer, so if you're hoping for a cooler weather, I'm really not sure that it will be much difference. However, Australian weather can be extremely unpredictable. I've personally been to Melbourne and it's just amazing, I went to places such as Queen Victoria's Market and Luna Park. I just looked up to be more specific about the temperature, it averages around 20-30 during January which isn't too bad at all. I haven't been to the other places so I really can't offer any insight. However, if you decide to go to Mlbourne I promise you, you will never run out of places to go.

certainly January / February is the hottest time in Australia up to 45C on very hot days, generally in 30s
in addition that period is the school holidays which means tourist sites and accommodation are most busy
personally I would be OK travelling at that time but if you have an alternate in mind for that period perhaps do that
travel in Australia is likely best during mid spring - so September / October
