Category in culinary art western?

Hello do you guys mind telling me about category in culinary art . Like kitchen have hot cooking , cold cooking , pastry , bakery .. What's in hot cooking and the others ? (Eg. Cold kitchen - plating,salads,garnishing)

I would love to know more In details of all these so I can start plan the way that I want to focus on to make sure I doesn't go to the wrong one in the future later. Thanks

    Where are you ? these are not terms used in cooking in the UK. What is cold cooking?
