I need advice which type of cuisine should I tackle on . I need help from all the educated chef or those experienced .?

I'm currently working in one of the ex member of Jamie's fifteen whom shop opened in Singapore . I'm now started to plan my route for the future .

1. What kind of food do you want to sell in the future ?

-basically I got many ideas but I don't know it belongs to which cuisine . I want to sell food that actually focus on ladies , or young generation . (Dessert,cold appetizer )pastry dessert like churros , creme brûlée , ,macaroon , profiteroles

-at first I was thinking about doing in fine dining but that was really a bad idea in my country Malaysia people .

- I wanted to make it simple and classic , selling classic dessert , or stunning appetizer , hot cookings involved seafood (fish, scallops,) meAt ( beef,chicken,foie gras )

Well I couldn't really differentiate the food in french cuisine and Italian cuisine. Which both of this really amazed me . If you had any advice or Idea please let me know in here or email me cornthedog@live.com or you can introduce me someone who expert in this case . Thank you so much

    I'm not some great chef to give you what kind of cuisine you should pursue. But my word of advice especially me coming from Malaysia and know Singapore well too, you need to see the facts what demographic of people living there, their income, their lifestyles, the majority of the people's need in expecting a meal. Times are tough even those eating out on companies expense accounts are finding hard to claim or file for reimbursement. The locals are definitely looking for cheap affordable hawkers food from their local markets, kopitiam or shops in their own flats. Unless you have years of achievements and accomplishments from prominent cooking schools, culinary schools even working experience in top hotels maybe you can find a cinch in some 5 stars hotel otherwise they may be looking for kwai loh to fit the job. Not to upset /disappoint you though

    Then you have no palate. Come back and ask this again after you develop one.
