What are some good fillings for a burrito?
I know some common fillings include rice, beans, mince/ground beef, cheese, sour cream. But I definitely need some veggies in there and it needs to be something I can freeze (so not salad stuff I guess). Any good ideas of combinations I can do? What's your favourite filling?

I like to use grilled courgettes, sweet peppers and red onion wedges- just slice, brush with olive oil and place in a hot griddle pan until they have nicely charred lines and edges. Gorgeous with mozzarella, lovely and squidgy with some spiced rice and refried beans, mango or pineapple salsa.

fruit pie fillings are great for burritos, so are some custards! I like sweet dessert type burritos!
