How do I make a pizza that isn't covered in grease when I pull it out of the oven?

The pie I usually make has mozzarella cheese, pepperoni, bacon, canadian bacon, mushrooms, and Italian sausage baked in a 500° oven for 15 minutes. I always put the Italian sausage on the pizza raw before tossing it into the oven (if that makes any difference), could that be where the grease is coming from? Or could it be from something else on the pizza?

I'm tired of having to blot the grease off with a paper towel every time I make pizza.

@ Sweetrole and I Am A Tree, there's no need to act like a couple of c*nts guys. I only asked the question because, oddly enough, when I first started making pizza, I didn't have any problem with grease whatsoever (even when putting raw Italian sausage on the pie).

    Don't use any meat toppings raw on pizza. They make it greasy and they also are unlikely to full cook in the time it takes the pizza to cook. Try cooking the sausage in your pizza sauce. I like to brown the sausage in a bit of olive oil, add the sauce, bring it to a boil then reduce to a simmer, cover and simmer for at least an hour. Then take out the sausage to cut up for topping and use the sauce for the pizza. Makes it extra yummy. I also use marinara instead of "pizza sauce" because to me pizza sauce always has too sweet of a taste.

    The bacon & sausage should be fully cooked BEFORE you put them on the pizza as toppings.

    Yes, that will eliminate the grease you're finding after baking the pizza.

    Wow - I'm hoping you are just kidding and not that dumb. All the meats and cheese have fat and will create the grease you don't want. Pre cook the meats as they are not getting 'cooked' for only 15 minutes. You can drain the fat after cooking but before putting it on your pie.

    You've got cheese and four kinds of meat, all high-fat, on the pizza. How could you expect there NOT to be grease all over it? If you want less fat on the pizza, use fewer high-fat ingredients in it. Sure, it would help to cook some of the fat out of the meats before they go on the pizza, but they are still going to have quite a bit. Less meat and more vegetables would work better in terms of fat content.

    Matt, here is your problem. A lot of the sausage, has fat, that is one part. The biggest problem is the bacon.

    A lot of the packet bacon is almost al fat. get my bacon from my butcher, loads less fat, more meat.

    The sausage I use is the Italian. I get the mild with fennel seeds. and is a leaner blend.

    For spice, instead of pepperoni, I use chili flakes.

    When using bacon and sausage, you are not going to fully cut out the oil or fat. Choose your bacon wisely.

    Cook and drain all your meats before assembling your pizza. It'll make a healthier pie for you.

    The grease comes from the cheese fat, so use low fat cheese
