When I tried to download a large Google Doc file as a PDF it changed my formatting and added a blank page between each of my pages?

It may be because the doc file has page breaks or section breaks where you are not expecting them. Open the file in Microsoft Word switch to Draft View and look for page breaks and section breaks. If there is nothing between two page breaks or between a section break and a page break, Acrobat will add a blank page.
You can also see these breaks in Google Docs by clicking on the View Menu and unchecking "Print Layout".
