Why would the staff at "gay resorts" spit in the food of their customers if they "thought the customer was gay"?

But YES, waitstaff and kitchen staff REGULARLY spit in, add cigarette ash to, or pee, semen, poop, etc. to the food they serve customers who are rude to them or treat them like "servants" rather than servers....and (most of the time) those people DESERVE what they get!

I got ten years in restaurant work, and I have seen staff spit in food, and once P*ss in it, if you are treating them badly. Nothing to do with sexual orientation.
