How to repair wall where plaster AND lath are damaged?

I recently bought an old house that had some vandalism, and the thieves had stolen the copper by breaking through a plaster and lath wall. What would be the best way to repair this? Should I go back with 2 layers of drywall (the 2nd layer being there to shim it out in place of the lath). Or should I replace the lath, and go back with plaster, or drywall?

    drywall would be cheaper and easier and no one would know the difference
