Not listing current employer on references?

I need to find a job in another city but until I do I need to keep my current job. The problem is my employers are vindictive people with a history of outright firing people for wanting to leave. So on my references could I state that I am currently employed but the employers information has been withheld for my protection?

Simply indicate on your resume that you are currently employed.

On your list of references, do not list your current employer.

There is nothing unusual about that, a prospective employer will know exactly what is up.

Many applications have a box to check that says "please do not contact my current employer." Your situation is not uncommon.

I would not omit my current employer from Job History, but would omit them from references, in any case, if I was in your situation.
