Could anyone recommend special regional dishes to try while traveling around India?

I will be traveling to many different regions and have an open itinerary. I might even choose to go to a place specifically for their food if I want to try it. Thank you!

    OF course every where have a special dish and different type of food and delicious taste.

    India is a only country where have so much diversification. Now depend in which part are you travelling in India ?

    Each state has its own street food - why sometimes, you find different street food in different towns of same state. Unless you have something specific in mind, it is difficult to suggest so general.

    I would recommend Aloo tikki, tandoori chicken, lassi, pao bhaji, chole bhatoore, paratha...
