It is generally considered best to book about 8-10 weeks in advance of your travel, for a domestic flight. But if you see a good deal before that, definitely jump on it because there is no guarantee that fares will drop.
Kayak.com can help you track fare changes, and compare the various airlines. Discount carriers aren't always represented on travel sites, so be sure to check out their sites too (Southwest, Jet Blue, Frontier, Allegiant, and Spirit). They are often, but NOT always, cheaper. On our last trip to Disney, we flew Delta - I found tickets for $169 round-trip, which was less than any of these discount carriers. You just never know - airfare is very unpredictable.

If you live close to an airport that uses Southwest I would keep an eye open for their sales. To start Southwest bags fly free unlike the other air carriers so round-trip you save $50 a person which of course adds up fast depending on the size of your family. You can go to their webpage and sign up for their rapid rewards club (free) and you will get emails when they have sales.
We ALWAYS keep an eye on flights to Orlando and every single time we have used Southwest because it ends up being the cheapest.

Go to google airfare daily and search on fares from your town to Orlando for the dates you want to travel. That searches all the airlines. Airlines are always changing flight prices so you have to check all the time. Once you get a price you like book it.

The trick is to get on the email lists of travel sites and discount airlines. Be ready to strike when the inevitable air fare sale hits. Luck favors the prepared.

Have you tried Allegiant? They fly every day a great many flights from the Orlando/Sanford airport.
Many travel agents do no list them I have used their service and so fart have been greatly impressed,
especially by the low prices.
