I know there are easier ways but out of curiosity, can you fix a strict NAT on Xbox One by getting rid of cheap modem and buying your own?

Yes and no. Depending on your ISP (Internet Serivice Provider) obtaining a new modem may not change anything. Sometimes you can call you're ISP or go to your modem/router settings via internet and change the bandwidth or speed of your internet.

Buying a different modem wouldn't necessarily change your NAT type, it depends on what it's set to in the factory. Just change the setting on your current one, it's free that way.
