Question about Passover Matzoh?

I was reading an article about shmurah matzoh and it said the process of making these had to take no longer than 18 minutes.

Does anyone happen to know the reason for this? It seems a curious rule, because obviously in the early days of celebrating Passover there was no way to measure time so accurately.

    It's to prevent any possible rising of the matzah which would make it leavened and unfit for use. As far as the early days go, I don't see how that means anything. We cannot eat leavened bread, so any method used to comply with that law is valid.

    It's just a very strict observance of the law where it would be physically impossible for any leavening to take place. You're not required to eat shmurah matzah, some people just like following the law very strictly.

    It's the same with Kosher, there are different levels of strictness.

    Fear not for the Messiah has already came, his name is Jesus. He died for us so old ways such as passover no longer are relevant.
