What do I need to make and sell food legally?
I want to can and sell salsa and other foods, but I just need to know how to do it legally. I know it has to be cooked in a certified kitchen. I know all about the labeling. I have a food manager certification. I just need to know if there's anything I need to know about the canning process. I don't have any money to spare for legal stuff so I want to get it down right before I start selling.
All advice and shared experiences are welcomed.

Well as long as this is not on a huge scale .. Let's say its just like a home business then its fine ... But if you are going to run a factory then health inspectors need to check you out.

Canning is for later on now you must concentrate on building a customer base - check with town hall and public health people to see what regulations apply

one thing you'll need is product liability insurance in case someone gets sick or dies from eating your product
