Will a roux made with soy flour and almond milk thicken like a roux made with regular flour and milk?

I have a recipe calling for milk and flour but am trying to go low carb, and don't want to mess up the whole thing.

    Soy isn't that great for you and almond milk might as well be water. If your doing low carb then just use heavy cream in place of the milk. As far as a flour substitute that would depends on what your making with it. If it's only a little bit I wouldn't worry about it.
