If Adam and Eve's only rule was not to eat fruit from one tree, could they have done all sorts of bad stuff and not get in trouble?

Well, some people say that, but if hadn't been that "bad" thing it would have been something else. They have to get out of the garden in order to populate the world.
Most Christians miss a big clue in that story, two actually.
One is when God says "they have become AS WE ARE and know good from evil". What does that mean? Is the sin KNOWING the difference and being AS GODS.
And the next one is that we were expelled from the garden BEFORE we could eat the fruit of EVERLASTING LIFE. Why do Christians think they get to "live forever" when Adam and Eve didn't get that piece of fruit?
But if you meant sexual things. God said "Multiply" and the only way for humans to do that is by having sex.

Without knowledge of good and evil they didn't know disobedience was evil and obedience good.
Without eating the fruit they would have no knowledge of good or evil.
God could have simply not created the tree. Or the snake. Or put one of those flaming swords next to it. But he didn't want to. He wanted humanity to sin because he is a sadist.

They wouldn't have know to do 'bad stuff'. All they had was God's law until Satan gave them new evil thoughts which developed into evil desires.

God wanted to know if they are willing to let him, as their Creator, tell them what to do. They did not know of any other kind of bad stuff, because God apparently wanted for this lesson to be simple and straightforward. As a result of their rebellion, they brought sin and death to his offspring Romans 5:!2
Imperfect men and women chose, and choose, to let God tell them what to do. Abraham almost sacrificed his son, and when God stopped him he said "Now I do know...." In this way, God gives us a choice, and reacts to our choices.
