Why didn't Yahweh make his stories in the bible be in line with the laws of nature he created ?
Because many of his stories leave no trace in history or geology and we then have people like creationists arguing that god altered those laws we see so rigidly consolidated, for no reason, just to have those stories created.
Examples: God made millions of cubic kilometers of water come from nowhere in the story of Noah, all while keeping the plants alive under kilometers of water, teleporting the animals back into their habitat after the flood.... etc.

there's 0 evidence the god character ever did a thing; but ignoring the bible is what christians do....wouldn't you?

Honestly what other option do we have. Creation itself is a miracle. Who is man billions of years after creation to judge what the creator did and how he did it? Are we to believe these precise "so rigidly consolidated" laws came from nothing?
However those Bible stories happened and God had them written in the Bible for very good reasons.
One reason is to preserve righteous humans. Badness of man escalated to such a great scale in Noah's day (kinda like today) that if He hadn't brought the flood, man would have been extinct thousands of years ago.
If he would have done things any other way, his purpose of having perfect humans live on a paradise Earth forever would never work. He has done things in a way that when his purpose is finally realized, all of his free thinking creatures will have made a choice based on everything that has happened and, the issue that was brought up in the Garden of Eden will never have to come up again.
And yes they have many geologic and historical proof. Many Bible characters are proven to have lived by archeology. This isn't true of mythological books such a the odyssey, etc. the evidence they use to support an ice age can be used to support the flood. Though all separated, every culture, not just the Jews has a story very similar to the flood which coincides with the Bible in Genesis after the flood when all men spoke the same language but where forced to separate. The evidence abounds, but each individual has to want to see it...
