Which cake should I use?
I'm making a cake for my moms bday. What I'm wanting to do it this: 2 layers of cake with a strawberry filling in the center (strawberrys, sugar, and cornstarch). I'm going to ice the cake with a chocolate whipped cream icing to keep it light and not to sweet. And on top im going to put the remaining strawberry filling with fresh strawberries.
My question is what kind of cake should I use? I'm doing vanilla, and thinking of doing a sponge cake, but I'm afraid it will get to soggy. I'm making it a day b4 we eat it b/c I have to travel to the party and won't have time to as assemble it there.
Will a sponge cake work or should I do a regular cake instead?

I would go with a regular cake. If your strawberry filling is fairly thick and not juicy, it should hold up and not be soggy. The cornstarch in your filling should cause the filling to become almost gelatin like. For transporting your cake, if you have a cake carrier, put the cake in the carrier then pack the carrier in an insulated bag or container with frozen gel or ice packs so the whipped cream does not melt or turn and your strawberry filling stays firm.

It will only take ten minutes to assemble it there.
Bake it ahead, freeze it, and it will thaw on the way.
Then add your fruit...no way a fruit filling won't make any cake soggy if made ahead.
