I have a VISIO 65in LD 1080P hooked up to Verizon cable but tv shows HDMI 2 720P. What I'm I doing wrong?

You are doing nothing wrong. The video resolution is set by the device sending the video (in this case the cable box). The TV is just reporting what it's getting.
So, check the settings of the cable box to see if you can get it to put out a different resolution.
Note that changing the resolution will not put detail in a picture that was never there in the first place. Old SD video will still be SD and will still look pretty poor by today's standards.
