    I like mashed potatoes but I always do this . Boil extra potatoes and after they cool put them in the refrigerator ,then make fried potatoes with them the next day or one more day after . They cook up fast and are delicious . If you fried them right after boiling they would not be the same .You have to refrigerate them after boiling .
