What is the best discipline for a forward horse?
I currently do English Pleasure but my new mare is very forward which excludes us from doing calm/controlled disciplines. What discipline would be best for a fast horse excluding jumping?

Depends on the breed. I know a lot of game horses excel in saddleseat, but most saddleseat horses have high headsets and are saddlebreds, arabs, morgans and walkers.

Competitive endurance?
If you have your own personal endurance, coupled with patience and ability, dressage would actually be a good idea. The first aim in dressage, from what I seem to remember from the words of Col. Podhajsky, are that you want impulsion at the hindquarters. Perhaps she's part way there!

i was going to suggest jumpers but maybe dressage if she could quiet a little
