Couple weeks will definitely be fine,. As long as you don't have food in the oil that will make it go bad. Pure oil will keep fine for a lot longer than 2 weeks.

Why are you leaving oil in the dutch oven? Filter it bewteen uses and keep in a cool dark spot and it will keep longer.
