How does cooking ingredients affect their life?

Update:

So I have some soya milk which I opened yesterday. It says to consume within 3 days of opening.

I've put half a litre in a cake, does that mean I should eat it by Monday?

I always use soya milk in cakes and my other half still eats them 10 days later and he's fine.

I'm doing this one for a customer though, so I'd really like to know how this affects the life of the soya milk.

Thanks,

Frankie

once things are cooked, that does change the spoilage date.

NO ONE worries about eggs when they are baked in cake, cookies, etc. cooking changes it.

    ALSO, sugar is a preservative.

I worked at a bakery for 15 years.. worked at a hospital and nursing home cooking as well for 10 years. Once those products are baked into a dessert, the original shelf life no longer applies.

Most times dairy products last much longer when added to baked goods, especially if they are kept refrigerated. I am sure your cake will safe to eat five to seven days from now and probably longer.
