How do I break up with him without hurting his feelings?
There's this guy that I had been seeing and he's a nice guy....but I met somebody else. Like I said he's a really nice guy and I don't want to completely destroy him just telling him that I've moved on. I just want us to be friends now. So how do I go about as far as what to say when the time comes?

You can't break up with someone - especially if you're breaking up with them to be with someone else - without hurting their feelings. Feelings will be hurt. You may not be able to remain friends. This is your fault for not breaking up when you're feelings changed, and instead waiting until you actually found someone new to leave him for.
It seems like you don't feel that you've done anything wrong. The way you've phrased this doesn't seem to take into account the way you've betrayed your bf and are about to blindside him. This is harsh. He will be upset. No way to avoid it.
