Do i need to lock the moisture inside with a sealer or paint or something ?

you need to either air dry or kiln dry your lumber
the fact that you don’t want to dry it doesn’t matter, it needs to be done
you cannot lock in the moisture with a top coat, as the moisture tries to escape it will lift the finish off
