Multi-monitor scaling problem with older games?

I am trying to play some old Q3 engine (Jedi Academy for example) games on my Windows 10 Desktop computer. It has 3 monitors connected and the graphics card is an AMD R9 280x

The problem is when I start the game, the default resolution is 800X600; however, when I try to increase the resolution to something higher like 900x1600 it locks the window in the upper left hand corner of the middle screen and expands down and right onto the right screen.

I have tried the method of turning r_mode "-1" and setting r_width/height to the appropriate values but the SAME thing happens. I have even tried disabling the right monitor in the graphic card control software, but with no success.

Any ideas?
