Can a rental facility cash my paycheck or withhold my mail?
I went to check for my mail, two days in a row they are telling me that no mail has arrived. I am expecting my paycheck to come which was mailed to me from Ohio to NH the day before thanksgiving. Am I crazy for thinking something is wrong?

No one can cash your paycheck except you. Your mail can be withheld if it's a rented mailbox and you haven't paid them. Otherwise, they would give your mail as it arrives. Contact your manager and find out when the paychecks were mailed. The mail may just be extra slow. It often takes mail longer to arrive in December because it's their busiest time with all the extra mail people send for the holidays.

You have not waited long enough. With no mail on Thursday or Sunday it is going to take longer then it seems like it should.
No they cannot cash our check that would be illegal. Tampering with your mail is also illegal.
