can I fit a 6 speed cassette on bike rims compatible with 8-11 speed cassettes? (I'm thinking of getting a Shimano WH-RS21 wheel set)?

    A 6 speed is undoubtedly a "freewheel". So no...a six speed freewheel will NOT work on a wheel designed for an 8 to 11 speed "cassette". See link & scroll down a little for an illustration showing the differences.
