Carrot and potato stew?

I have too many carrots and potatoes. Do you have a tasty recipe for a carrot and potato stew that you like? Thanks in advance for sharing.

    INGREDIENTS Nutrition

    SERVINGS 6 UNITS US

    1 large onion, chopped

    2 large carrots, sliced

    5 potatoes, peeled and cubed

    about 2 cups water (more or less)

    2 bay leaves

    1 teaspoon thyme

    1 teaspoon tarragon (preferably fresh)

    2 teaspoons sweet paprika

    1 can peeled tomatoes, chopped (400g can)

    3 tablespoons whole wheat flour, dissolved separately in some cold water

    1 tablespoon oil

    sea salt and pepper

    fresh parsley, for garnish

    DIRECTIONS

    Heat the oil in a large pot and add the chopped onion.

    Sauté for a couple of minutes, then add cubed potatoes.

    Cover potatoes with water (about 2-2 1/2 cups, maybe more depending on your pot size).

    Add sliced carrots, bay leaves, tarragon, sweet paprika, thyme, salt and pepper.

    Let it cook until the veggies are tender (about 20 minutes).

    Add flour, dissolved separately in a cup with some cold water.

    Add sliced, peeled tomatoes.

    Stir and cook for another 5 minutes.

    Serve with fresh parsley on top!

    You need a pressure cooker 2 kg of large carrots 2 kg of potatoes

    1kg Kassler cutlet with bones. (Kassler is a mild salted and smoked pork cutlet http://www.dolacek.de/beef.jpg )

    Saute the Kassler in sunfloweroil. Quarter a sour apple (best Belle de Boskoop),remove the core and add it Further add a handfull of raisins, 2 cubed onions, 20 uniperberries, a spoonful of dried oregano, a spoonful of dried tarragon, a spoonful of dried savory 2 bay leaves and

    Pressure cook the meat for 30. min.

    While cooking peel the carrots and cut them in 8mm thick slices.

    Also peel the potatoes and cut them in slices as big as the carrots. The potatoes must be stored in salty water else they become brown.

    After 30 min take the meat out of the pot, mix the potatoes ( without the water) and the carrots and put them in the pot. Put the meat above and pressure cook it for another 10 min.

    Add some cutted carrot leaves as garni if you have else take parsley.

    I would make potato salad and carrot salad if I had an excess of carrots and potatoes. It's hot where I live.

    Try putting your carrots and potatoes in a stew. This will use them up and provide you with a tasty dish!

    grate them both and make soup with fresh grated ginger too. add orange juice to half of the mix for variety.
