what program made the assets in the game Journey?
like textures and the modeling program, would like to at some point get into 3d modeling and texture making in the future and would like to make a game with a similar art style

I would assume that the modeling program used for a game like Journey would either be 3DS Max or Maya.
In the end, the program used to create the assets really doesn't matter that much. You could very likely create all of the models used in Journey with a free modeling program, such as Blender.

This is like expecting to be able to paint the Mona Lisa once you have the same paint and brushes that Leonardo used.
It doesn't work that way.
