    Stuffing made with no animal products (there is vegetable broth). There is also Tofurky which is made from soybeans,. Supposed to resemble turkey but imho not really. Not bad, however. You might ask her if being vegetarian is bc of religious reasons, bc of concern for animal rights or just trying to eat less animal fat. She's your daughter so you can speak freely with her or at least, u should be able to ask those questions. If it's a matter of eating less animal fat, be aware that turkey is low fat, a good source of protein and she can just eat a small piece.

    I would just make lots of meat-free sides. Vegetarians don't really need a meat replacement; they just load up their dish with other things, and the vegetable dishes become the focus.

    If you really want to offer a meat substitute, try a nice sauteed portobello mushroom, they're kinda 'meaty.'

    If she's into the meat substitutes, there's always tofurkey (tofu fake turkey), but not all vegetarians are into meals that try to imitate meat.

    Literally anything without meat or gelatin. Mashed potatoes, sauteed vegetables, apple pie, quinoa, salad, fruits, cheese lasagna (no Parmesan), pasta, mac and cheese, soup (with no meat broth). Literally anything. Be careful of ingredients in boxed foods. If you have any questions about ingredients, just ask.

    Eggplant parm is a great idea, just substitute the parmesan with mozzarella ( tastes just as good )
