What health benefits do you lose when boiling/liquifying vegetables in a soup vs. eating them raw?

    Depends on who you ask. Some things are sensitive to heat, and will break down when cooked. In most cases, this actually helps you digest the food and make it easier for you to get the most benefit from eating it. But some things, particularly enzymes, are irretrievably damaged by cooking, and so need to be eaten raw, or at least cooked to temperatures below what will denature the enzymes.

    Overcooking veggies removes it's vitamins.
