New Thanksgiving Veggie Side Dish?

Looking for some new ideas. We love just about all vegetables, so please share one of your favorite vegetable side dish recipes. Casserole, stove cooked or salad. But PLEASE - NO BACON, HAM OR MEAT.

    Last year I baked cauliflower with a roasted red pepper alfredo sauce, it was a big hit. Slice up the cauliflower, blanche quickly and layer in a greased baking dish, make your own (or buy) alfredo sauce & puree it with some roasted red peppers (again, fresh or jar).

    You can make it ahead, then just throw it in the oven on Tday for 30 minutes.

    Another is asparagus, marinate 15 minutes in olive oil & chopped garlic, sprinkle with salt & pepper.

    One favorite that I make almost every year is green beans sauteed in butter with yellow and red bell pepper and onions. Salt & pepper. Delicious.

    Can't go wrong with a big tray of roasted root veggies either-- parsnips, acorn squash, yams, potaotoes, turnips, carrots, beets, etc.; cut your veggie selection into chunks, toss in olive oil, sprinkle w/salt & pepper, throw in some pearl onions & roast on 450 until tender. Simple but so yummy, and such a nice alternative if you're sick of the sickly sweet yam dishes & mashed potatoes.

    Cut up Green and Yellow Squash, Red and Orange Peppers, Toss with Olive Oil, Salt, Pepper and roast in the oven until browned.

    Carrot slices fried in olive oil, sprinkle on a small bit of brown sugar then coat with balsamic vinegar.

    fruits and vegetables when unripe has starches as carbohydrates and converts into fructose when it ripens.
