can I use these cheap momentry switches instead of expensive purpose built arcade buttons or will they just be useless for that job?

It will not have a very good "feel" and is probably a bit small.
You can get the real thing - an operator with a V3 microswitch - for the same price, if you search a bit on ebay. eg.

They are what real arcade machines use to the very light "click" action.

It should work fine, However, the button will be smaller and harder to use, from the Arcade switches, particularly the button size.

They probably wouldn't feel great to press the way you'd normally use arcade buttons, too small.

Not really, because most arcarde controller button switches are "push to make" and not "momentary".
