A baby will eat whatever kind of food you put in its mouth. The baby doesn't know (or care) if it's Mexican food, or Italian food, or what kind of food it is.

Both my kids liked spicy food right from a very young age. We're Dutch.
I'd say there are two aspects to why:
1. Offering spicy food very early, when babies are usually most open to new tastes. Many people offer their babies nothing but bland food, and then they're surprised when their toddlers only accept bland food.
2. Kids are people with actual individual personality. Some like it spicy. Some never will.

They don't prefer it, just like Indian babies don't prefer prawn Vindaloo. I assume they are force fed those spicy foods.

That's stupid. No baby is born with a preference for any particular type of food. Mexican babies also don't automatically know how to speak Spanish either.
