Use a free and open source product like Veracrypt.
With Veracrypt, you can create an encrypted file that acts as a container. When you've signed in with password, you can put folders and files within that encrypted container and access them, but when you sign out, it's just an encrypted file.
I've done this before and created a 10 GB encrypted container file on my HD. The rest of the HD was normal and only that 10 GB container was encrypted and accessible only through the Veracrypt program.
